The subclass bonus action is amazing and that eating every bonus action makes two weapon fighting melee impossible so you are heavily handicapped going dex. I had a lot of fun running a greatsword strength build with heavily armored feat and defensive fight style.

I would say take the first 5 levels ranger. Then take either two levels of druid or three of rogue. Scout and assassin would work well for your concept. I would say wield a longsword and shield, or a greatsword/axe as the horizon walker is about one powerful attack. If you weren't being melee, you could take a longbow and focus on that.
